Garlic Turkey Meatballs with Oatmeal & Flaxseed

Turkey MeatballsThis morning I decided to make meatballs for dinner tonight after I get back from a marketing training that I will be running.  I decided that if I could make the meatballs beforehand and boil wholewheat pasta and steam broccoli , when I get home tonight.  These meatballs are much healthier and include oatmeal and ground flaxseed to bump up the fiber and grain count. Simple recipe and easy to make, but the big thing is that these are SUPER flavorful!

1 Pound of Lean Ground Turkey
1/2 Cup of Oatmeal
2 Cloves of garlic chopped very fine
1/2 Small Onion grated
1/4 cup of parmesan cheese grated
A few leaves of basil chopped very fine
2 teaspoons of ground flaxseed
Salt & Pepper

Mix it up and roll it into balls and bake for about 25 – 35 minutes on 350 degrees.

I will serve with whole wheat pasta, chopped tomatoes, steamed broccoli, and olive oil.  But these would be great on whole wheat bread as a Meatball Sub or served with Spaghetti Squash.  What other ideas would use these meatballs for?
