Fall Harvest Crockpot Chili 

Fall is officially here and I am thrilled about it! It’s my favorite season mainly because most of my favorite foods are fall staples!

Last week, I made Mashed Sweet Potatoes in the crockpot and had A little bit extra so I decided why not throw the rest into my Crockpot Chili?!?

I must say I was pleasantly surprised by how it came out. It was filling and delicious. I also added some green peas for an extra dose of protein and Zuchinni, which along with the peas, adds some extra immunity boosting phytonutrients.

Here is the recipe below:

  • 1 pound of Ground Turkey
  • 8 ounces of Fresh Salsa
  • 8 ounces of Fresh Pico De Gallo
  • 8 Ounces of Green Peas
  • 8 ounces of Frozen Corn
  • 8 ounces of Frozen Bell Peppers & Onions Mix (or 1/2 cup of each fresh)
  • 1 Zuchinni, Chopped
  • 1 can of black beans, rinsed
  • 1 can of kidney beans, rinsed
  • 2 teaspoons of Taco Seasoning
  • 8 ounces of Mashed Sweet Potatoes

Throw it all in the crockpot and and let it cook on high for 4 hours or on low for 8 hours.

I served mine with Green Chili Cornbread. (Hint: Add 2 tablespoons of Green Chili Salsa to cornered mix and enjoy the sweet heat!)

Healthy Recipe: Apple Cinnamon Crockpot Oatmeal

Many of you know that I love using my Crock Pot and now that the weather is starting to cool down, it is about time for me to get back into it!  Many times I use my crockpot in the morning to create a meal that will be ready for dinner, but I wanted to share a CrockPot recipe that you can use while you are sleeping and wake up to a tasty and delicious and healthy breakfast for you and the family.   Check out this amazing recipe for a simply and tasty oatmeal recipe:

  • 2 cups of dry rolled oats
  • 4.5 cups of water
  • 1/4 cup of ground flax seeds
  • 1 scoop of Vanilla Shakeology (or any vanilla protein powder)
  • 1 large apple, peeled and chopped
  • 1 cup of raisins
  • 1 tsp of cinnamon
  • 1 tblsp of grated orange peel
  • Dash of nutmeg

Combine all ingredients and put them into your crockpot and cover to cook on low for 9 hours.  In the morning when you wake up, simply serve it in bowls and top with agave, maple syrup or brown sugar for a touch of sweetness. This recipe serves about 8 people. If you find that it is too thick, you can add more water or milk (I add almond milk) to it.

For those of you looking to lose weight, one thing I would suggest is to include foods that are high in fiber in your diet.  Fiber helps to keep you fuller longer and also help with digestion and keep you regular.  All good things! Here are 7 foods that are packed with Fiber and some suggestions on how to prepare them.

1. Peas

  • Add frozen peas to pasta dishes, whole wheat of course 🙂
  • Add frozen peas to ground turkey when making tacos or lettuce wraps

  • Add it to a stir fry with chicken breast, peppers, carrots, onions, and mushrooms

My Real Food Family

It’s no secret that I love, love, love my crock pot.  So any meal that has only a couple of real food ingredients that just get dumped in the crock pot is the meal for me!  This morning I spent about 15 minutes dicing carrots, onion, and garlic, threw a few more things in and dinner was cooking.  When I got home from work and the gym, dinner was ready!  And the even better part?  It only cost about $5 for 8+ servings of this deliciousness!  My husband raved about it and my teenager even said it was good.  And the really interesting thing I learned about lentils is that they are believed to bring wealth and prosperity to those who eat them.  I don’t know about you, but I could use a little more wealth and prosperity!
