Easy, Quick & Healthy Dinner: Italian Chicken & Veggies 

So I have been on this kick with experimenting various ways to eat clean, without spending a lot of money and without a lot of time to cook or clean up.  Trader Joe’s has been my go to of the past few weeks when it comes to my “Meal Prep Sundays” and today I made another “One Dish Wonder” that rocked my socks – Italian Chicken & Veggies.  It’s simply so easy and delicious! 


  • 1 Pound of Skinless Boneless Chicken Breast Tenders, diced into chunks
  • 1 Container of Cherry Tomatoes
  • 1 Pack of Asparagus, diced into 1 inch pieces
  • 1 Container of Sliced Crimini or Baby Bella mushrooms
  • 4 Cloves of Garlic, minced/crushed
  • 1/2 Onion, diced
  • Olive Oil, to be used sparingly
  • Italian Seasoning – I used Tastefully Simple’s – Dried Tomato & Garlic Pesto Mix (Click Here for more info)


  1. Pre-heat oven to 400 degrees
  2. Assemble a baking dish with tomatoes, mushrooms, onions, asparagus, and chicken (see above).
  3. Sprinkle minced garlic over the entire spread of food
  4. Drizzle a olive oil over the veggies and add seasoning to the entire dish
  5. Bake for 25 minutes – until chicken is done and juice run clear and the tomatoes begin to burst
  6. Mix together and cook for 5 more minutes to get all of the flavors to combine.

 There are many options of how to enjoy this dish: 

  • Serve on it’s on as it’s a great one dish wonder – protein and veggies
  • Serve on top of pasta – I’m going to enjoy mine with a new Edamame Pasta I got from Costco
  • Serve on top of brown rice
  • Serve on top of mashed potatoes (I know, but keep the portions small)
  • This is also a great option for your weekly meal prep – place into tupperware containers for grab and go lunches or dinners that are healthy, tasty, and easy to enjoy!

Clean Eating Recipe: Rosemary Chicken with Mushrooms & Green Beans

So we all know how much I love finding new ways to eat clean and mix things up with the same old, same old – chicken.  This weekend, I was roaming around in the grocery store hoping to get a little inspiration, when I remembered that my parents have a massive rosemary bush in their garden.  Hmmmm…what goes perfect with rosemary??? Chicken and Mushrooms!   Now the task was to make it quick and #MealPrepLikeABoss – worthy!

Here’s what I came up with – a one dish wonder – Rosemary Chicken with Mushrooms and Green Beans.  

The recipe is super simple and super easy…but most of all…it’s SUPER DELICIOUS!!!


  • 1 pound of boneless, skinless chicken tenders, diced
  • 1 bag of Trader Joe’s Crimini Mushrooms (See Link)
  • 1 bag of Trader Joe’s Organic Green Beans (See Link)
  • 1/2 of Onion, diced
  • Seasoning – I used Trader Joe’s 21 Seasoning Salute and Tastefully Simple Garlic Garlic seasoning.
  • 5 Springs of Fresh Rosemary, chop the leaves of 2 sprigs and keep 3 whole


  1. Preheat oven at 400 degrees
  2. Spray a baking dish with coconut oil or olive oil spray
  3. Place chicken, mushrooms, and green beans into the baking dish
  4. Sprinkle onions, chopped rosemary, and spices over the chicken, mushrooms and green beans
  5. Place 3 whole sprigs on top of dish
  6. Bake for 20-25 minutes or until the chicken is done and juices run clear.

I meal prepped this by serving it over brown rice!

Guilt Free “Burger”

20130813-153304.jpgFor those who know me, they know that I love BURGERS! Seriously, I’m from the midwest and not gonna lie, I’m a beef raised girl.  But, I also know that eating burgers all of the time are not going to help me stay committed to my mission of eating cleaner and healthier.  For those who know me, also know that I’m into depriving myself, so I like to find ways to get creative with making healthier choices.  Like today’s lunch, which was AMAZING!  We had a BBQ last night and yes, I had a burger, but there was no way that I could do a burger again, so I compromised and made a grilled Portabella Mushroom Burger, instead.  It was still super filling and tasty, but it wasn’t heavy and I didn’t feel like crap, after eating it. Plus it gave me energy to crank through the second half of my day, preparing for my upcoming fitness challenge

 Here’s the recipe:

1 large Portabella Mushroom Cap
1 Tblspn of olive oil
1 garlic clove crushed
Dash of Montreal Steak Seasoning

Mix the oil, garlic, and spices into a bowl and brush over the mushroom cap (top and bottom). Grill the cap until it starts to soften, then flip for a few more minutes. 

Top with grilled onions, cheese, lettuce, tomato and mustard and put on a whole wheat bun.

Enjoy! Serve with grilled corn or a nice green salad.

Quick Healthy Meal: Penne with Sautéed Veggies


Tonight I was having issues trying to figure out what I wanted for dinner. I almost opted for ordering takeout, but decided to see what I could cook up in the kitchen. I had 1/4 of a bag of whole wheat penne pasta, grilled chicken tenders from lunch, tons of frozen veggies that I needed to get rid of (broccoli, asparagus, spinach), grape tomatoes and Portabella mushrooms that were on their last leg, and an onion. Aha!

I boiled the pasta and diced the onions, tomatoes and mushrooms (that were edible) and grabbed a handful of spinach, asparagus and broccoli. I used tablespoon of coconut oil in a pan and sautéed the veggies. I added a heaping teaspoon of crushed garlic (I buy organic crushed garlic in a jar). As the veggies did their thing, I added Himalayan salt, Italian seasoning blend, and Emeril’s essence (homemade).

Once the pasta was al dente I added it and diced chicken tenders to the pan with the veggies. I let it cook for a few more minutes so the pasta can absorb the flavors of the sauté pan. I topped with a little bit of Parmesan cheese and fresh cracked black pepper.

It turned out delicious and full of flavor. I didn’t even miss the sauce! It was a much better version of those frozen skillet meals that you buy, but it didn’t have the heavy salty sauce and the chicken was real! Plus, it took me 15 minutes from start to finish. I used myfitnesspal to check the calorien count and it came out to 400 calories. I was 100% satisfied with tonight’s dinner.

Keeping grilled chicken and frozen veggies on hand is a great way to make sure that you have ingredients to make quick and healthy meals. I saved some of the chicken veggie mixture and will use that for a whole wheat wrap tomorrow and will top with mozzarella cheese.

Another Healthy, Tasty and Filling Dinner Option!

Healthy Pasta Dinner Creation 🙂

This past weekend on my trip to the grocery store, Trader Joe’s, I bought a pre sliced mushroom, onion, asparagus stir fry mix.  I was immediately thinking Asian cuisine, but when I realized that I was out of brown rice and all of the ingredients to make my stir fry sauce, I opted for Italian. In a large skillet, I added Wildtree European Tuscan Grapeseed Dipping Oil, boneless skinless thinly sliced chicken breast, chopped onion/garlic/shallot mix (from Trader Joes), the stir fry mix (from Trader Joes), 3 handfuls of baby spinach, a container of halved cherry tomatoes and italian spices and sauteed it all together. I had half a bottle of tomato sauce left over that I added some pasta water (from the whole wheat tortellini that I was boiling) to thicken and added it to the skillet. I added the tortellini (al dente-ish) and let it sit for a bit. Added a touch of cracked black pepper and parmesan cheese and had a delectable dinner that was packed with veggies and flavor.
